Ingredients
3 tablespoons butter
2 large yellow onions, thinly sliced
2 cloves garlic, minced
1 teaspoon thyme
1 pound ground beef
1 tablespoon all-purpose flour
1 cup beef broth
1 tablespoon Worcestershire sauce
4 slices Gruyère or Swiss cheese
4 brioche buns, toasted
Instructions
1. Melt butter in a large skillet over medium heat. Add sliced onions and a pinch of salt. Cook for 25–30 minutes, stirring frequently, until caramelized and golden brown.
2. Stir in garlic and thyme, cooking for 1–2 minutes until fragrant.
3. Push onions to the side and add ground beef. Cook until browned, breaking it apart with a spoon, then mix with the onions.
4. Sprinkle flour over the mixture, stir to combine. Slowly pour in beef broth and Worcestershire sauce. Simmer for 5–7 minutes until slightly thickened.

Gruyère adds the best flavor, but Swiss or Provolone work too.
