Description

This Blueberry Coffee Cake is a soft, buttery easy recipe loaded with juicy berries, a cinnamon crumb topping, and a sweet glaze that makes every slice feel bakery-worthy. It is perfect for a quick breakfast, cozy brunch, easy dessert, or sweet snack, and it fits beautifully into your collection of breakfast ideas, food ideas, and comforting homemade bakes.

Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1 cup sour cream

1/4 cup milk

2 teaspoons vanilla extract

2 teaspoons baking powder

1/2 teaspoon salt

2 cups blueberries

1/2 cup brown sugar

1/2 cup all-purpose flour

1 teaspoon ground cinnamon

1/4 cup unsalted butter, melted

3/4 cup powdered sugar

1 1/2 tablespoons milk

Instructions

1. Preheat the oven to 350°F and grease an 8-inch square baking pan or line it with parchment paper.

2. Make the crumb topping by mixing the brown sugar, flour, cinnamon, and melted butter until crumbly. Set it aside.

3. In a medium bowl, whisk together the flour, baking powder, and salt.

4. In a large bowl, beat the softened butter and granulated sugar until light and fluffy.

5. Add the eggs one at a time, then mix in the sour cream, milk, and vanilla extract until smooth.

6. Add the dry ingredients to the wet mixture and stir just until combined.

7. Gently fold in the blueberries.

8. Spread the batter evenly into the prepared pan.

9. Sprinkle the crumb topping all over the batter.

10. Bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.

11. Let the cake cool completely.

12. Stir together the powdered sugar and milk to make a glaze, then drizzle it over the cooled cake.

13. Slice and serve.

Notes

Use room temperature butter, eggs, and sour cream for the smoothest batter and most even bake.

Toss the blueberries lightly with a spoonful of flour if you want to help keep them suspended in the cake.

Let the cake cool before glazing so the drizzle stays on top instead of melting into the crumb.
