Ingredients

2 cups butternut squash (peeled and diced into 1/2-inch cubes)

2 large yellow onions (thinly sliced)

2 tablespoons olive oil (divided)

1 tablespoon unsalted butter

1 teaspoon fresh thyme (chopped)

3 large eggs

0.5 cup heavy cream

0.5 teaspoon salt

0.25 teaspoon black pepper

4 ounces goat cheese (crumbled)

1 9-inch tart shell (homemade or store-bought shortcrust)


Instructions

1. Preheat oven to 400°F (200°C). Toss 2 cups of diced butternut squash with 1 tablespoon olive oil, salt, and pepper. Roast for 25–30 minutes until tender and caramelized. Let cool.

2. While squash roasts, caramelize onions. Heat 1 tablespoon olive oil and 1 tablespoon butter in a skillet over medium-low. Add 2 sliced onions and cook 25–30 minutes until golden. Stir in 1 teaspoon chopped thyme in the last 5 minutes.

3. Blind bake a 9-inch tart shell at 375°F (190°C) for 15 minutes with weights, then 5 more minutes without. Let cool slightly.

4. In a bowl, whisk 3 eggs, 0.5 cup cream, 0.5 teaspoon salt, and 0.25 teaspoon black pepper. Fold in 4 oz crumbled goat cheese.

5. Layer roasted squash and caramelized onions in tart shell. Pour egg mixture over. Sprinkle extra thyme if desired.

6. Bake at 375°F (190°C) for 30–35 minutes until set and golden. Cool 10 minutes before slicing. Serve warm or room temp.

Notes

Dice the squash evenly to ensure it roasts uniformly and fits well into the tart.

Don’t rush the onions—low and slow gives the best caramelization.

If using a store-bought crust, be sure to blind bake it fully to avoid sogginess.
