3/4 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon salt

3 large eggs

2/3 cup granulated sugar

1 teaspoon vanilla extract

2 tablespoons vegetable oil

2 cups finely grated carrots

4 tablespoons unsalted butter, softened

Instructions

1. Preheat the oven to 350°F. Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.

2. In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.

3. In a large bowl, beat the eggs and granulated sugar until pale and slightly thickened. Mix in the vanilla extract and vegetable oil.

4. Fold the dry ingredients into the wet ingredients just until combined, then stir in the finely grated carrots.

5. Spread the batter evenly into the prepared pan and bake for 10 to 12 minutes, or until the cake springs back lightly when touched.
