Ingredients

2 cups cooked chicken, shredded or chopped

3 cups cooked rice

3 cups broccoli florets, lightly steamed

1 can cream of chicken soup

1 cup sour cream

1/2 cup milk

2 cups shredded cheddar cheese, divided

1 cup shredded mozzarella cheese, divided

2 tablespoons butter, melted

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.

2. In a large mixing bowl, whisk together the cream of chicken soup, sour cream, milk, melted butter, garlic powder, onion powder, salt, and black pepper until smooth.

3. Stir in 1 1/2 cups of the cheddar cheese and 1/2 cup of the mozzarella cheese.

4. Add the cooked chicken, cooked rice, and lightly steamed broccoli to the bowl.

5. Fold everything together until the mixture is evenly coated.

6. Spread the casserole mixture into the prepared baking dish.

7. Top with the remaining cheddar cheese and mozzarella cheese.

8. Bake uncovered for 25 to 30 minutes, until hot and bubbly and the cheese is melted.

9. Broil for 1 to 2 minutes at the end if you want a deeper golden top.

10. Let the casserole rest for 5 minutes before serving.

Notes

Use freshly cooked or leftover chicken, but make sure it is well seasoned for the best flavor.

Do not overcook the broccoli before baking, or it can turn too soft in the casserole.
