Ingredients

1 1/2 pounds baby potatoes

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

2 cups shredded cheddar cheese

1 cup sour cream

8 slices bacon, cooked and crumbled

3 green onions, sliced

1 tablespoon butter


Instructions

1. Preheat the oven to 400°F and lightly grease a baking dish.

2. Wash and dry the baby potatoes, then cut any large ones in half.

3. Toss the potatoes with olive oil, salt, black pepper, and garlic powder until evenly coated.

4. Spread the potatoes in the baking dish in a single layer and dot with butter.

5. Roast for 35 to 40 minutes, stirring once halfway through, until the potatoes are tender and lightly golden.

6. Remove the dish from the oven and gently press a few potatoes slightly so the cheese can settle into the gaps.

7. Sprinkle the shredded cheddar cheese evenly over the hot potatoes.

8. Return the dish to the oven for 5 minutes, or until the cheese is fully melted.

9. Add spoonfuls of sour cream over the top, then scatter with crumbled bacon and sliced green onions.

10. Serve hot.

Notes

Use baby Yukon Gold or red potatoes for the best creamy texture and sturdy skins.

Cook the bacon until very crisp so it stays flavorful on top of the hot potatoes.

Add the sour cream after baking so it stays creamy and does not disappear into the cheese.
