Ingredients
1 1/2 cups graham cracker crumbs
6 tablespoons unsalted butter, melted
1 cup marshmallow creme
8 ounces cream cheese, softened
1/2 cup powdered sugar
1 cup heavy whipping cream
1 cup semi-sweet chocolate chips
3 ounces dark chocolate (60-70%)
1/2 teaspoon vanilla extract
1 1/4 cups heavy cream (for ganache)
1 cup mini marshmallows
2 tablespoons shaved chocolate (for garnish)
2 tablespoons crushed graham crackers (for topping)
Instructions
1. Crush graham crackers into fine crumbs. Mix with melted butter until well combined, then press into a 9×9” pan. Chill in the fridge for 15 minutes.
2. In a bowl, beat marshmallow creme, cream cheese, and 1/4 cup powdered sugar until smooth. Whip 1/2 cup heavy cream separately to stiff peaks and fold into the marshmallow mixture. Spread evenly over crust.
3. Melt 1/2 cup semi-sweet chocolate and let cool slightly. Beat with 4 oz cream cheese, 1/4 cup powdered sugar, and vanilla. Whip another 1/2 cup of heavy cream and fold into the chocolate mix. Spread over the marshmallow layer.
4. Warm 1 1/4 cups heavy cream until steaming. Pour over 1/2 cup semi-sweet chips and 3 oz dark chocolate. Stir until smooth. Cool slightly, then pour and spread gently over mousse.
5. Top with mini marshmallows. Use a kitchen torch or broil for 30–60 seconds to toast. Garnish with crushed graham crackers and shaved chocolate.
6. Chill for at least 3 hours or until set. Slice into 9 squares and serve.
