Ingredients
3 heads garlic
2 medium Yukon Gold potatoes
3 tablespoons butter
2 shallots
4 cups chicken broth
1/2 cup heavy cream
4 sprigs fresh thyme
1 bay leaf
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
4 slices toasted baguette
Instructions
1. Preheat oven to 400°F (200°C). Slice the tops off garlic heads, drizzle with olive oil, and wrap in foil. Roast for 35–40 minutes until cloves are soft and golden. Let cool and squeeze out roasted garlic.
2. In a large pot, melt butter over medium heat. Add sliced shallots and cook until translucent, about 4–5 minutes.
3. Peel and dice potatoes, then add to pot along with roasted garlic. Stir for 2 minutes.
4. Pour in chicken broth. Add thyme sprigs and bay leaf. Bring to a boil, then reduce to simmer. Cook 20 minutes until potatoes are fork-tender.
5. Remove thyme stems and bay leaf. Puree the soup using an immersion blender until smooth.
6. Stir in heavy cream. Add salt and pepper to taste. Heat gently without boiling.
7. Serve hot, garnished with thyme, olive oil drizzle, and optional pancetta or croutons. Pair with toasted baguette.
