Description

Delicious Persian Jeweled Rice is a stunning easy recipe that turns simple ingredients into a colorful, fragrant side dish packed with saffron rice, sweet dried fruit, crunchy nuts, and bright pops of pomegranate. Ingredients

2 cups basmati rice

3 cups water

1/2 teaspoon saffron threads

2 tablespoons hot water

2 tablespoons butter

1 tablespoon olive oil

1 large yellow onion, thinly sliced

1/3 cup dried cranberries

1/3 cup golden raisins

1/3 cup slivered almonds

1/4 cup chopped pistachios

1 tablespoon orange zest

1/2 teaspoon ground cinnamon

1/4 teaspoon ground cardamom

1 1/4 teaspoons salt

1/2 cup pomegranate seeds

2 tablespoons chopped fresh parsley


Instructions

1. Rinse the basmati rice several times until the water runs mostly clear, then soak it for 20 minutes and drain.

2. Steep the saffron threads in 2 tablespoons hot water and let it sit for 10 minutes.

3. Bring 3 cups water to a boil, add the rice and 1 teaspoon salt, then cook until the rice is just tender, about 8 to 10 minutes. Drain well.

4. Heat the butter and olive oil in a large skillet over medium heat, then cook the sliced onion until golden and lightly caramelized, about 12 to 15 minutes.

5. Stir in the dried cranberries, golden raisins, slivered almonds, pistachios, orange zest, cinnamon, cardamom, and remaining salt. Cook for 2 minutes until fragrant.

6. Transfer the drained rice to a large serving dish or pot, then drizzle the saffron water over part of the rice so some grains stay white and others turn golden.

7. Spoon the fruit and nut mixture over the rice and gently fluff to combine slightly while keeping the jeweled look.

8. Top with pomegranate seeds and fresh parsley, then serve warm.

Notes

Use high-quality basmati rice so the grains stay long, light, and separate.

Do not overcook the rice before draining or it can lose the fluffy texture this dish needs.

Add the pomegranate seeds and parsley right before serving so the final platter stays bright and fresh.
