Description

This Easy Cake Mix Coffee Cake is a soft, cinnamon-swirled breakfast treat with a buttery crumb topping and sweet vanilla glaze that feels bakery-worthy but comes together with simple pantry staples. It is perfect for a quick breakfast, easy dessert, brunch spread, or cozy snack, making it one of those easy recipe favorites you will want in your regular list of breakfast ideas, food ideas, and simple homemade baking recipes.

Ingredients

15.25 ounces yellow cake mix

1 cup sour cream

3 large eggs

1/2 cup vegetable oil

1 teaspoon vanilla extract

3/4 cup brown sugar

1 1/2 teaspoons ground cinnamon

1 cup all-purpose flour

1/2 cup unsalted butter, melted

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Instructions

1. Preheat the oven to 350°F and grease a 9×13-inch baking pan.

2. In a large bowl, mix the yellow cake mix, sour cream, eggs, vegetable oil, and 1 teaspoon vanilla extract until smooth and fully combined.

3. Spread the batter evenly into the prepared baking pan.

4. In a separate bowl, stir together the brown sugar, ground cinnamon, and all-purpose flour.

5. Pour in the melted butter and mix until a crumbly streusel forms.

6. Sprinkle the crumb topping evenly over the cake batter.

7. Bake for 30 to 35 minutes, or until the center is set and a toothpick inserted into the cake comes out with a few moist crumbs.

8. Let the cake cool in the pan for at least 20 minutes.

9. In a small bowl, whisk together the powdered sugar, milk, and 1/2 teaspoon vanilla extract until smooth.

10. Drizzle the glaze over the cooled cake.

11. Slice into squares and serve.

Notes

For the best crumb topping, mix just until clumps form so you get both small crumbs and larger buttery pieces on top.

Let the cake cool before glazing so the icing stays visible instead of melting into the topping.

Greek yogurt can be used in place of sour cream if needed, though the texture may be slightly less rich.
