Ingredients
2 cups pecan halves
1/4 cup pure maple syrup
2 tablespoons coconut sugar
1 teaspoon ground cinnamon
1/4 teaspoon fine sea salt
1 teaspoon vanilla extract
Instructions
1. Add the pecans to a dry skillet over medium heat. Stir frequently for 3-4 minutes until fragrant and lightly toasted.
2. Reduce heat to medium-low. Pour in the maple syrup and sprinkle in the coconut sugar, cinnamon, and salt. Stir continuously for 3-4 minutes until the mixture thickens and coats the pecans.
3. Once the glaze becomes sticky and slightly reduced, remove the pan from heat. Stir in the vanilla extract and continue stirring for another minute as it cools and sets slightly.
4. Spread the pecans onto a parchment-lined baking sheet in a single layer. Let them cool completely—they’ll crisp up as they sit.
Notes
Use pure maple syrup, not pancake syrup, for that rich caramel flavor.
Stir constantly while cooking to avoid burning and ensure even coating.
Cool completely before storing to retain crunch.
