1 bay leaf

2 tablespoons chopped fresh parsley


Instructions

1. Pat the beef dry, then toss it with the flour, salt, and black pepper until lightly coated.

2. Heat the olive oil in a skillet over medium-high heat and brown the beef in batches for added flavor.

3. Transfer the browned beef to the crockpot.

4. Add the potatoes, carrots, celery, onion, and garlic over the beef.

5. In a bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, thyme, and rosemary.

6. Pour the broth mixture into the crockpot and add the bay leaf.

7. Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours, until the beef is tender and the vegetables are soft.

8. Remove the bay leaf, stir gently, and taste for seasoning.

9. Sprinkle with fresh parsley and serve hot.
