Ingredients
1 tablespoon olive oil
1 medium yellow onion, diced
2 medium carrots, diced
2 celery stalks, diced
4 garlic cloves, minced
1 teaspoon Italian seasoning
1/4 teaspoon crushed red pepper flakes
2 cans cannellini beans, drained and rinsed
4 cups vegetable broth
2 cups kale, chopped
1/2 cup grated Parmesan cheese
1 tablespoon lemon juice
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion, carrots, and celery, then cook for 6 to 8 minutes until softened.
3. Stir in the garlic, Italian seasoning, and crushed red pepper flakes, then cook for 30 seconds until fragrant.
4. Add the cannellini beans and vegetable broth, then stir well and bring to a gentle simmer.
5. Simmer for 15 minutes so the vegetables become tender and the flavors blend together.
6. Mash about 1 cup of the beans in the pot with the back of a spoon to make the broth a little creamier.
7. Stir in the kale and cook for 2 to 3 minutes until wilted.
8. Add the Parmesan cheese, lemon juice, salt, and black pepper, then stir until combined.
9. Ladle into bowls and finish with fresh parsley and extra Parmesan if desired.
Notes
Use cannellini beans for the creamiest texture, but great northern beans also work well.
For a thicker soup, mash more of the beans before adding the kale.
Add a splash of extra broth when reheating leftovers because the soup thickens as it sits.
