Ingredients

1 1/4 cups eggnog

1 cup all-purpose flour

3 large eggs

2 tablespoons melted butter

1 tablespoon granulated sugar

1/8 teaspoon salt

1/2 teaspoon ground nutmeg

1/2 teaspoon ground cinnamon

1 teaspoon vanilla extract

butter or nonstick spray for greasing pan


Instructions

1. In a blender, combine 1 1/4 cups eggnog, 1 cup flour, 3 eggs, 2 tablespoons melted butter, 1 tablespoon sugar, 1/8 teaspoon salt, 1/2 teaspoon nutmeg, 1/2 teaspoon cinnamon, and 1 teaspoon vanilla. Blend until smooth. Let rest 15–20 minutes.

2. Heat an 8 or 10-inch nonstick skillet over medium. Lightly grease with butter or spray before each crêpe.

3. Pour 1/4 cup batter into the pan. Tilt and swirl to spread thin. Cook 1–2 minutes until edges lift.

4. Flip and cook another 30–60 seconds. Transfer to a plate. Repeat with remaining batter to make 8 crêpes.

5. Serve warm with whipped cream, fruit, or powdered sugar. For richness, add cream cheese or mascarpone filling.

Notes

Always let the batter rest for at least 15 minutes for smoother crêpes.

Use a blender for lump-free batter and fast prep.

If freezing, layer with parchment and store in a sealed bag.
