Ingredients
1 lb large shrimp, peeled and deveined
3 tbsp unsalted butter, melted
1 tbsp olive oil
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
1/3 cup panko breadcrumbs
1 tbsp chopped fresh parsley
1 tsp lemon zest
1 tbsp lemon juice
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp Italian seasoning
1/4 tsp crushed red pepper flakes
Instructions
1. Preheat the oven to 425°F and line a baking sheet with parchment paper or lightly grease it.
2. Pat the shrimp very dry with paper towels and place them in a mixing bowl.
3. In a separate bowl, stir together the melted butter, olive oil, garlic, Parmesan, panko, parsley, lemon zest, lemon juice, salt, black pepper, Italian seasoning, and red pepper flakes.
4. Pour the mixture over the shrimp and toss until every piece is well coated.
5. Arrange the shrimp in a single layer on the prepared baking sheet.
6. Roast for 8 to 10 minutes, or until the shrimp are pink, opaque, and lightly golden on top.
7. Remove from the oven and serve immediately with extra lemon if desired.
Notes
Pat the shrimp dry very well so they roast instead of steam.
Do not overcook the shrimp or they can turn rubbery very quickly.
Freshly grated Parmesan melts and browns better than pre-shredded cheese.
