Homemade Lemon Crepes are a bright and elegant easy recipe that turns a simple breakfast into something special. Ingredients

1 1/4 cups all-purpose flour

3 large eggs

2 1/2 cups milk

2 tablespoons granulated sugar

1/4 teaspoon salt

2 tablespoons unsalted butter, melted

1 tablespoon vanilla extract

1 tablespoon fresh lemon zest

2 tablespoons fresh lemon juice

Butter for greasing the pan

1 cup whipped cream or lemon filling

Powdered sugar for serving

Lemon slices for garnish


Instructions

1. In a large bowl, whisk together the flour, sugar, and salt.

2. Add the eggs, milk, melted butter, vanilla extract, lemon zest, and lemon juice, then whisk until the batter is smooth and thin.

3. Let the batter rest for 20 to 30 minutes so the crepes cook up soft and flexible.

4. Heat a nonstick skillet over medium heat and lightly grease it with butter.

5. Pour a small amount of batter into the center of the pan and swirl quickly to coat the bottom in a thin layer.

6. Cook for about 1 to 2 minutes until the edges lift and the bottom is lightly golden, then flip and cook the other side for 20 to 30 seconds.

7. Transfer the cooked crepe to a plate and repeat with the remaining batter, stacking the crepes as you go.

8. Fill each crepe with whipped cream or lemon filling, then roll or fold.

9. Dust with powdered sugar and garnish with lemon slices before serving.

Notes

Use a blender for the batter if you want an extra smooth texture with no lumps.

Do not over-grease the pan or the batter may slide instead of setting properly.

Stack finished crepes on a plate and cover lightly so they stay soft while you cook the rest.
