Ingredients

1 cup unsalted butter, softened

1/2 cup granulated sugar

1 teaspoon vanilla extract

2 cups all-purpose flour

1/4 teaspoon salt

11 ounces soft caramel candies, unwrapped

3 tablespoons heavy cream

2 cups milk chocolate chips

1 tablespoon coconut oil


Instructions

1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.

2. Beat the butter, sugar, and vanilla together until smooth and creamy.

3. Add the flour and salt, then mix until a soft dough forms.

4. Press the dough evenly into the prepared pan.

5. Bake for 22 to 25 minutes, until the edges are lightly golden.

6. Let the shortbread cool completely in the pan.

7. Place the caramel candies and heavy cream in a microwave-safe bowl, then heat in short bursts, stirring until smooth.

8. Spread the melted caramel evenly over the cooled shortbread layer.

9. Chill the pan for 30 to 45 minutes, until the caramel is firm.

10. Lift the slab from the pan and cut it into 16 bar-shaped pieces.

11. Melt the chocolate chips with the coconut oil until smooth.

12. Dip each bar into the melted chocolate or spoon the chocolate over each bar until coated.

13. Place the bars on parchment paper and let the chocolate set before serving.

Notes

Chill the caramel layer well before slicing so the bars hold their shape neatly.

Use a sharp knife and wipe it clean between cuts for smoother edges.
