Ingredients

1 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chunks

1 cup mini marshmallows (about 56 per cookie)


Instructions

1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.

2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.

3. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes).

4. Beat in the egg and vanilla extract until fully incorporated.

5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

6. Fold in the chocolate chunks evenly throughout the dough.

7. Scoop dough into 1.5 tablespoon-sized balls and place them on the prepared baking sheets.

8. Bake for 8 minutes, then remove from oven and gently press 5–6 mini marshmallows onto each cookie.

9. Return to oven and bake an additional 3–4 minutes until marshmallows are golden and cookies are set.

10. Cool on the pan for 5 minutes before transferring to a wire rack. Enjoy warm or store for later.

Notes

Don’t overmix the dough; stop once the flour is blended in.

For extra toasty marshmallows, broil the cookies for 30 seconds at the end.

You can freeze the dough balls for up to 2 months—just add marshmallows after baking.
