Ingredients
3 pounds russet potatoes, peeled and cut into chunks
6 tablespoons unsalted butter
4 ounces cream cheese, softened
1 cup sour cream
1/2 cup whole milk
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 cup shredded cheddar cheese
2 tablespoons chopped chives
1/2 teaspoon paprika
Instructions
1. Preheat the oven to 375°F and grease a 9×13-inch baking dish.
2. Add the peeled and cut potatoes to a large pot of salted water and boil until fork-tender, about 15 to 18 minutes.
3. Drain the potatoes well and return them to the warm pot.
4. Mash the potatoes until mostly smooth.
5. Add the butter, cream cheese, sour cream, milk, salt, black pepper, and garlic powder.
6. Mix until creamy and fully combined without overworking the potatoes.
7. Spread the mashed potato mixture evenly into the prepared baking dish.
8. Sprinkle the shredded cheddar cheese over the top.
9. Dust lightly with paprika.
10. Bake for 25 to 30 minutes, until hot and lightly golden around the edges.
11. Top with chopped chives before serving.
Notes
Use russet or Yukon Gold potatoes for the fluffiest texture.
Drain the potatoes very well so the casserole stays creamy instead of watery.
For extra color on top, broil for 1 to 2 minutes at the end, watching closely.
