Ingredients

2 sheets puff pastry (thawed but still cold)

8 oz cream cheese (softened)

1/3 cup granulated sugar

1 egg yolk

1 tsp vanilla extract

1 tsp lemon juice

1 egg (for egg wash)

1/2 cup powdered sugar (for glaze, optional)

1 tbsp milk (for glaze, optional)


Instructions

1. In a medium bowl, mix together softened cream cheese, granulated sugar, egg yolk, vanilla extract, and lemon juice until smooth and creamy.

2. Unfold the puff pastry sheets onto a lightly floured surface. Cut each sheet into 6 equal squares.

3. Fold the corners of each square slightly toward the center and press gently to secure.

4. Spoon about 1 tablespoon of the cream cheese filling into the center of each pastry square.

5. In a small bowl, whisk 1 egg with a splash of water. Brush the edges of each danish with this egg wash.

6. Place pastries on a parchment-lined baking sheet and bake at 400°F (200°C) for 15 to 18 minutes or until puffed and golden.

7. (Optional) Mix powdered sugar and milk until smooth. Drizzle glaze over cooled danishes.

Notes

• Make sure the puff pastry stays cold until it goes in the oven for the best rise.

• Don’t overfill the center with cheese to prevent overflow.

• For a fruit twist, add a bit of jam or fresh berries before baking.
