Ingredients
1 1/2 pounds baby potatoes
2 tablespoons Dijon mustard
1 tablespoon whole grain mustard
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes
1/4 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley
1/4 cup mayonnaise
1 tablespoon Dijon mustard
1 teaspoon honey
1 teaspoon lemon juice
1 pinch salt
1 pinch black pepper
Instructions
1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
2. Boil the baby potatoes in salted water for 12 to 15 minutes until fork-tender. Drain well and let them steam dry for 5 minutes.
3. Arrange the potatoes on the baking sheet and gently press each one with the bottom of a glass until slightly flattened.
4. In a small bowl, mix 2 tablespoons Dijon mustard, whole grain mustard, olive oil, garlic, paprika, salt, black pepper, and red pepper flakes.
5. Brush the mustard mixture over the smashed potatoes, making sure the tops and edges are coated.
6. Sprinkle the Parmesan evenly over the potatoes.
7. Roast for 25 to 30 minutes until deeply golden and crisp around the edges.
8. While the potatoes roast, stir together mayonnaise, 1 tablespoon Dijon mustard, honey, lemon juice, salt, and black pepper to make the dip.
9. Transfer the hot potato poppers to a serving plate, sprinkle with parsley, and serve warm with the creamy mustard dip.
Notes
Use baby Yukon Gold or other waxy potatoes for the best creamy texture and crisp edges.
Let the boiled potatoes steam dry before smashing so they roast instead of turning soggy.
For extra crispiness, do not overcrowd the pan and roast until the edges look deeply golden.
