Ingredients
1 cup semi-sweet chocolate chips
1 cup butterscotch chips
1/2 cup creamy peanut butter
2 cups mini marshmallows
1 1/2 cups salted roasted peanuts
1 teaspoon vanilla extract
1/4 teaspoon fine sea salt
Instructions
1. Line a large baking sheet with parchment paper or a silicone baking mat and set aside.
2. Add the semi-sweet chocolate chips, butterscotch chips, and creamy peanut butter to a large microwave-safe bowl.
3. Microwave in 20–30 second bursts, stirring after each burst, until the mixture is melted and smooth.
4. Stir in the vanilla extract and fine sea salt until evenly combined.
5. Add the salted roasted peanuts and mini marshmallows to the bowl.
6. Gently fold the peanuts and marshmallows into the warm chocolate mixture until everything is well coated.
7. Use a tablespoon or small cookie scoop to drop mounds of the mixture onto the prepared baking sheet.
8. Continue scooping until all of the mixture is used, spacing the clusters slightly apart.
9. Let the clusters set at room temperature until firm, about 1 hour, or refrigerate for 20–30 minutes for a quicker set.
10. Once the clusters are firm, transfer them to an airtight container, layering with parchment if needed, and store until ready to serve.
Notes
For a deeper chocolate flavor, replace some or all of the semi-sweet chocolate chips with dark chocolate chips.
To keep the clusters from sticking together in storage, separate layers with parchment paper in your container.
For a festive touch, sprinkle the tops with flaky sea salt, crushed candy canes, or colorful sprinkles while the coating is still soft.
