Ingredients

1 cup brown sugar

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon salt

1/2 cup milk

1/3 cup molasses

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract


Instructions

1. Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin.

2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, and salt.

3. In a separate bowl, whisk the brown sugar with melted butter. Add milk, molasses, and vanilla extract, stirring until smooth.

4. Pour wet mixture into the dry ingredients and stir just until combined. Do not overmix.

5. Divide the batter evenly into the muffin tin, filling each about 3/4 full.

6. Bake for 18–20 minutes. Toothpick inserted at the edge should come out clean (center will remain gooey).

7. Cool for 10 minutes in the tin before removing. Serve warm or at room temperature.

Notes

Don’t overbake—centers should stay slightly gooey.

Dark brown sugar adds deeper flavor if preferred.

These freeze well—wrap individually and thaw at room temperature.
