Ingredients
1 pound large shrimp, peeled and deveined
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon white pepper
1/2 teaspoon garlic powder
2 large eggs
3/4 cup cornstarch
1/4 cup all-purpose flour
1 teaspoon baking powder
Vegetable oil, for frying
4 cloves garlic, minced
2 green onions, thinly sliced
1/2 teaspoon red chili flakes
2 tablespoons chopped parsley or cilantro
1 tablespoon finely grated Parmesan, optional
Lemon wedges, for serving
Instructions
1. Pat the shrimp completely dry with paper towels, then season them lightly with salt, black pepper, white pepper, and garlic powder.
2. In one bowl, beat the eggs. In a second bowl, whisk together the cornstarch, flour, and baking powder.
3. Dip each shrimp into the beaten eggs, then coat well in the cornstarch mixture, shaking off any excess.
4. Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F.
5. Fry the shrimp in small batches for 2 to 3 minutes, or until golden, crisp, and cooked through. Transfer to a wire rack or paper towel-lined plate.
6. In a clean skillet, heat 1 tablespoon of oil over medium heat. Add the minced garlic, green onions, and red chili flakes, and cook for 30 seconds until fragrant.
7. Add the fried shrimp to the skillet and toss gently so the aromatics coat the shrimp evenly.
8. Finish with chopped parsley or cilantro and Parmesan if using. Serve immediately with lemon wedges.
Notes
Dry shrimp gives you the crispiest coating, so do not skip patting them well before breading.
Fry in batches to keep the oil temperature steady and prevent soggy shrimp.
Toss the shrimp with the garlic and chili mixture right before serving so the coating stays crisp as long as possible.
