2 tablespoons olive oil
1 medium yellow onion, diced

6 cups chicken broth
2 cups cooked shredded chicken
1 can cannellini beans, 15 ounces, drained and rinsed
1/2 cup green olives or Kalamata olives, sliced
1 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes
1 bay leaf
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons lemon juice
1/4 cup fresh parsley, chopped
Instructions
1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, then cook for 6 to 8 minutes until softened.
2. Stir in the garlic and cook for 30 seconds until fragrant.
3. Add the diced tomatoes, chicken broth, Italian seasoning, crushed red pepper flakes, bay leaf, salt, and black pepper. Stir well and bring to a gentle boil.
4. Reduce the heat and simmer for 15 minutes so the vegetables become tender and the broth develops flavor.
5. Add the shredded chicken and cannellini beans, then simmer for 8 to 10 minutes until heated through.
6. Stir in the sliced olives, lemon juice, and fresh parsley.
7. Remove the bay leaf, taste and adjust seasoning if needed, then serve hot.
Notes
Rotisserie chicken works beautifully here and makes this soup even faster to prepare.
