Ingredients

3 pounds beef chuck roast

1 large onion, thinly sliced

3 cloves garlic, minced

2 cups beef broth

1 can condensed French onion soup, 10.5 ounces

2 tablespoons Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon dried thyme

1 teaspoon kosher salt

1/2 teaspoon black pepper

6 hoagie rolls

12 slices provolone cheese

2 tablespoons butter

1 tablespoon fresh parsley, chopped


Instructions

1. Add the sliced onion and minced garlic to the bottom of the slow cooker.

2. Pour in the beef broth, condensed French onion soup, Worcestershire sauce, and soy sauce.

3. Stir in the dried thyme, kosher salt, and black pepper.

4. Place the chuck roast into the slow cooker and spoon some of the liquid over the top.

5. Cover and cook on low for 8 hours or on high for 5 hours, until the beef is very tender.

6. Remove the roast from the slow cooker and shred it with two forks, discarding large fatty pieces.

7. Return the shredded beef to the slow cooker and let it soak in the juices for 10 to 15 minutes.

8. Split the hoagie rolls and spread lightly with butter.

9. Toast the rolls in a 375°F oven for 4 to 5 minutes until lightly golden.

10. Fill each roll with shredded beef and top with 2 slices provolone cheese.

11. Broil the sandwiches for 1 to 2 minutes until the cheese is melted.

12. Ladle the cooking juices into small bowls and serve as au jus for dipping.

13. Sprinkle with chopped parsley and serve hot.

Notes

Chuck roast gives the best tender, shreddable texture for this sandwich.

Toasting the rolls helps keep them from getting soggy once filled with juicy beef.

Taste the broth before serving and add a splash more beef broth if you want a lighter au jus.
