Ingredients
16 oz cream cheese, softened
1 cup sour cream
1 oz ranch seasoning mix
1 1/2 cups shredded cheddar cheese, divided
8 slices bacon, cooked crisp and crumbled
1/4 cup green onions, sliced, plus more for garnish
1/4 cup diced pimientos, drained
1/2 tsp garlic powder
1/4 tsp black pepper
crackers, tortilla chips, pretzels, or fresh vegetables for serving
Instructions
1. Let the cream cheese soften at room temperature until smooth and easy to stir.
2. In a medium bowl, mix the softened cream cheese, sour cream, ranch seasoning mix, garlic powder, and black pepper until creamy and fully combined.
3. Fold in 1 cup of the shredded cheddar cheese, most of the crumbled bacon, the green onions, and the diced pimientos.
4. Transfer the dip to a serving bowl or small dish and smooth the top.
5. Sprinkle the remaining 1/2 cup cheddar cheese and the rest of the bacon over the top. Add a little extra green onion for garnish.
6. Cover and refrigerate for at least 1 hour so the flavors blend and the dip firms up slightly.
7. Serve chilled with crackers, tortilla chips, pretzels, or crisp vegetables.
Notes
Use fully softened cream cheese so the dip stays smooth and blends without lumps.
