Ingredients

2 cups almond milk

1 cup full-fat coconut milk (canned)

1/3 cup maple syrup

1 1/2 teaspoons vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 pinch ground cloves (optional)

1 pinch salt


Instructions

1. Add almond milk, coconut milk, maple syrup, vanilla extract, cinnamon, nutmeg, cloves (optional), and salt to a high-speed blender. Blend until smooth and frothy.

2. For a warm version, transfer the mixture to a saucepan and heat over medium-low until warmed through, stirring occasionally. Do not let it boil.

3. For a cold version, refrigerate for at least 1 hour before serving.

4. Pour into serving glasses and garnish with a sprinkle of nutmeg or cinnamon. Add a cinnamon stick or star anise for decoration.

5. Serve immediately or keep chilled for up to 4 days, shaking before each serving.

Notes

For a thicker consistency, add 1 tablespoon of soaked cashews or 1 teaspoon of cornstarch while blending.

Chill the eggnog for at least an hour to let the spices deepen. It tastes even better the next day.
